Description

This spicy kimchi fried rice is packed with flavor from the fermented kimchi, savory soy sauce, aromatic garlic and ginger, and a little heat. The eggs add richness, while the green onions and sesame seeds provide a fresh crunch.

  1. 1. In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic, grated ginger, and whites of the green onions. Sauté for 1 minute until fragrant.
  2. 2. Push the garlic mixture to the side of the pan and add the beaten eggs. Scramble the eggs, breaking them into small pieces as they cook. Once cooked, mix the eggs with the garlic mixture.
  3. 3. Add the chopped kimchi and 2-3 tbsp of the kimchi juice to the pan. Stir-fry for 1-2 minutes to combine all the flavors.
  4. 4. Increase heat to high and add the cooked rice. Use a spatula or wooden spoon to break up any clumps of rice. Stir-fry the rice for 2-3 minutes to heat through and coat with the kimchi mixture.
  5. 5. Pour in the soy sauce and mix well to evenly distribute the flavors. Season with salt and pepper to taste.
  6. 6. Remove from heat and garnish with the green parts of the green onions and sesame seeds.
